Hot-smoked (a.k.a. baked) salmon. Traditionally, appetizing shops will sell the loin or back part of a hot smoked salmon, which, while tasty, tends to be a little dry. Ours is different! Hot smoked over an assortment of hard and fruit woods, our kippered salmon is the whole fillet with the large belly attached – so it's not only smoky but lusciously rich.
