We use Scottish salmon fillets to cure our gravlax. First, we give the fillets a bath in lemon juice and aquavit. Then it gets cured with salt, sugar, pepper, and dill. After doing its thing for a few days, the cure is removed and freshly chopped dill is pressed onto the fillet. We are really proud of this product, and we know you're going to love it.
