Sturgeon is a seriously cool fish. Part of one of the oldest families of fish species on the planet, sturgeon have existed for some 245 million years. These are the massive fish from which true caviar is harvested. Rich and luxurious in every way, our sturgeon has an earthy finish that reflects the California lakes in which they were raised (and sustainably farmed). Typically, sturgeon is served with butter rather than cream cheese. We think it's fantastic on a well-toasted bialy.
