Steelhead trout, is really special.  It looks like salmon, it's got some similarities to salmon, but the flavour is just a little different.  It's got a silky mouthfeel, an assertive smokiness, and a clean earthy finish.  We slice it thinly and it is perfect on a bagel or bialy with cream cheese.
