Sometimes you want some balance.  Our homemade beet horseradish has a little less bite and a little more gentle sweetness than the white horseradish.  Don't be shoveling a whole spoonful in your mouth or anything like that, but it will make our gefilte fish sing, and your Hillel sandwich hum!
