We love these non-traditional latkes.  We refer to them as SPLs in our internal Shelsky's lingo.  They get crisp, but they're more tender than the traditional potato latkes, and they have a whole world of complex flavor.  Basically, they're awesome. Take our word for it!   To reheat: Place latkes on wire rack in a 425 degree oven until crisp and hot.  7-10 minutes
